Ingredients For Preserved Lemon And Olive Chicken Tagine

1 whole chicken or 3 lbs of chicken thighs2 @mina lemon preserves cut into quarters and the pulp separated from the skin1 tbsp turmeric1 tbsp ginger powder1 tbsp black pepper1 tbsp salt3-4 saffron thread3 onions3-4 garlic clovesHandful of @alreefbrand pitted green olives3-4 tbsps of olive oil or ghee1/2 cup of cilantro1/2 cup of parsley

Steps

Clean your chicken and pat dry it.Add your lemon pulp, garlic, onion, parsley, cilantro, saffron and spices to your chicken.Mix well allowing the spices to coat the chicken well. Cover and allow to marinate for 4 hours or overnight.Once you are ready to cook, preheat your oven to 400 degreesAdd the green olive and lemon preserve zest.Cover tightly and cook for 50 mins.Uncover and allot to cook for another 15-20 min or until golden.Serve with couscous, or white rice.
