Pre-heat the oven to bake at 200C. Get each potato and put it between two chopsticks as a guide. Slice through the potato (be careful not to cut all the way through on both ends).2. In a mixing bowl combine the vegan butter, oil, garlic, salt, pepper and any other seasonings you like!3. Placing a baking sheet on a oven tray, place your hassle backed potatoes on the tray coating each one and their slices with the garlic butter mixture (make sure you get the nooks and crannies).4. Bake in the oven for 30 mins at 200C.5. Once almost cooked, re-coat any left over garlic butter and sprinkle your dried herbs and vegan cheese. Bake for another 10mins until the cheese has melted!
