Ingredients 1 kg mini potatoes of choice2 tsp garlic powder2 tsp zahtar or other spice mix of choice1/2 tsp cayenne or paprika1/2 tsp salt1/4 tsp ground black pepper1/2 cup olive or other plant based oil of choice (plus 2 tbsp to grease potato skins)1/2 cup nutritional yeast Steps Preheat oven to 200 deg C.Thoroughly wash & scrub potatoes & slice in half.Score the flat sides in a diamond pattern, cutting down abt 1 cm deep but being careful not to cut all the way through.In a baking dish that’s big enough, arrange potatoes flat side down, brush with 2 tbsp of oil & sprinkle salt & pepper evenly, remove & set aside.Into the same baking dish, add the rest of the ingredients & mix well until a paste forms.Using a spatula, spread paste evenly on scored sides of potatoes then arrange them into the baking dish scored sides down.Bake potatoes for 40-50 mins or until they reach the colour & crispiness desired (flipping them at the halfway mark)Remove from oven, sprinkle with chopped fresh herbs (optional) & enjoy!
