Download ImageChinese Seafood Fried Rice Ingredients3 cups leftover plain rice (chilled in fridge overnight)3 tbsp oil2 large eggs (lightly beaten)3 cloves garlic (minced)1 cup shrimp or prawns (fresh or frozen & shelled)1 cup calamari or squid (fresh or frozen, cut into bite-sized pieces if too big)2 cups mixed vegetables (fresh or frozen, I used a mixture of carrots, corn & peas)1 tbsp light soy sauce1 tsp sesame oil1/2 tsp ground white pepper (to taste)1/2 tsp salt (to taste)StepsRemove rice from fridge & gently break up lumps (if any) & set aside.Heat 1 tbsp of oil in a wok or large pan over high heat, add eggs, leave for 10 secs, roughly break using spatula & transfer into a bowl.Add remaining oil, when hot, add garlic & cook for 1 min or slightly browned.Add shrimp & calamari, stir for 2 mins & add mixed vegetables,Cook for 1 min, add rice & stir for 1 min.Add soy sauce, sesame oil, pepper & salt, continue to stir fry until seafood is completely cooked & rice is lightly toasted.Add eggs back in, stir to combine & taste to adjust seasoning.Remove from heat & serve immediately.
