Download ImageGreek Lemon Rice IngredientsRice3 tbsp extra virgin olive oil1 shallot or medium yellow onion (finely diced)1 tbsp garlic (minced)2 cups brown rice4 cups vegetable stock (or water)1 tsp salt (to taste)1/2 tsp freshly ground black pepper (to taste)2 tbsp parsley or other fresh herb of choice (chopped)1/2 tsp chilli flakes1 lemon (zested & juiced)StepsIn a large pan on medium high heat, add oil.When hot, add shallot & garlic, sauté & stir occasionally until softened (abt 5 mins)Add rice & sauté, stirring continuously for 3 mins.Add stock, salt & pepper, cover & bring to a boil.Lower heat & simmer until all the liquid has been absorbed & rice is cooked (abt 20-30 mins)Remove from heat & let stand, covered (for 10 mins) then fuff with a fork.Remove lid, set aside to cool for 10 mins.Add chilli flakes, lemon zest & juice, stir, taste to adjust seasoning & set aside.Crispy Garlic2 tbsp extra virgin olive oil2 tbsp garlic (sliced)Steps Make Crispy GarlicIn a pan, heat oil on medium low.Add garlic & cook, stirring continuously until they turn a golden brown & becomes crispy (abt 5-7 mins)Remove from heat & transfer onto a plate lined with kitchen towels.FinisihingTo serve, scoop desired amount of rice onto serving plates, garnish with chopped herbs, chilli flakes, crispy garlic ‘chips’ & lemon wedges.*Reduce cooking time if using white rice Source : www.instagram.com
