Download ImageVegan Bubur Lambuk Ingredients1 tbsp oil1 cinnamon stick1 star anise2 cloves2 cardamoms1/2 tsp cumin seeds1 cup onion (grated)5 cloves garlic (grated)1 tsp ginger (grated)1 tsp curry powder1/2 tsp coriander powder1/4 tsp cumin powder1/4 tsp turmeric powder1/2 cup dried shiitake mushrooms (rehydrated & finely diced)5 cups water1&1/2 cups short or medium grain rice (washed till water runs clear & drained)1 cup carrots (diced)1/2 cup celery (diced)1/2 cup corn kernels1 tsp salt1/2 tsp ground black pepper1/4 cup coconut milkStepsHeat a large pot on medium high, add oil.When hot, add cinnamon, star anise, cloves, cardamoms & cumin seeds, fry for 1 min.Add onion, garlic & ginger, cook for 2 mins then add the powdered spices & mix well.Add mushrooms & cook for 5 mins.Add rice & rest of the ingredients (except coconut milk), lower heat to medium low & cook for 1 hr (stirring occasionally)Add coconut milk, stir, taste to adjust seasoning & cook porridge until it reaches desired consistency.Garnish with fried shallots, chopped fresh herbs of choice, peanuts & sliced chillies (optional)* For non vegan/vegetarian, substitute mushrooms for ground meat of choice Source : www.instagram.com
