Watch Video Chilli Oil Egg Fried Rice Ingredients 4 cups cooked rice of choice (chilled overnight)4 tbsp oil2 eggs (lightly beaten)4 cloves garlic (minced)1 cup shallot or onion (diced)1 cup carrot (diced)2 cups meat of choice (or fried tofu/mushroom for non meat option)4 tbsp chilli oil (homemade or bottled)2 tbsp soy sauce1 tbsp sesame oil1/4 tsp salt (to taste)4 tbsp scallion (chopped) Steps Heat 2 tbsp oil in a wok or large pan on high.Add eggs, cook for 1 min, quickly scramble, transfer into a bowl & set aside.Into the same wok, add 2 tbsp oil, garlic & shallot, cook till shallot turns translucent.Add carrot & meat, cook for 3-5 mins till meat starts to turn brown on the sides.Add rice, scrambled egg, chilli oil & soy sauce, stir well & break up any rice lumps with back of spatula.Add sesame oil, salt & scallion, stir, taste to adjust seasoning.Remove from heat, ladle into serving plates/bowls, top with more chilli oil (optional) & serve.
