Lemon Rice ingredients 2 cups cooked Basmati rice1/2 teaspoon Arad dal1/2 teaspoon chana daal10 peanuts10 cashew nuts3/4 teaspoon mustard seeds1/4 teaspoon whole cumin1/8 teaspoon Turmeric powder ( add more if you want the rice more yellow)10 curry leaves1 whole red dry chilli1/8 teaspoon AsafoetidaSalt to tasteChopped fresh coriander as needed2 tablespoons oil1 1/2 tablespoon lemon juice ( add less or more to taste)1 teaspoon finely chopped gingerSliced green chillies to taste Steps Heat the oil.Add the chana and arad daal.Also add in the mustard seeds and cumin.Fry until the daals just begins to turn pink.Add the peanuts, cashews, whole red chilli and Asafoetida. Fry for minute.Switch the heat off and add the curry leaves, turmeric powder, ginger and sliced green chillies.Bring the heat back on again and mix everything well.Once it begins sizzling again, add the lemon juice. Mix.Add the rice and salt to taste. Mix well.Close and steam for about 5 minutes.Garnish with freshly chopped coriander.Serve hot with your favourite veg curry. Source : www.instagram.com
