Download ImageCilantro Rice Ingredients1 cup rice of choice1 cup water2 tbsp oil2 inch cinnamon stick1 star anise3 cardamom3 cloves1 bay leaf1 cup onion (finely diced)1/4 tsp turmeric powder1 tsp salt (to taste)1 cup peasSpice Paste1 inch ginger5 cloves garlic1/2 cup onion2 green chillies (or 1 green bell pepper for less heat)1 cup fresh cilantro leaves (plus more for garnish)1/2 cup fresh mint leaves1 tbsp dessicated coconut1/4 cup waterStepsWash rice till water runs clear, drain, add water & cook on medium high heat till all the moisture has been absorbed, set aside to cool completely (alternatively, use day old chilled rice)Blend all ingredients for the spice paste in a blender or food processor till smooth & set aside.In a large pot, heat oil on medium high, add cinnamon, star anise, cardamom, cloves & bay leaf, cook for 1 min.Add onion & cook till they turn translucent.Add turmeric, salt & blended spice paste, cook till most of the water has evaporated (abt 5 mins)Add peas, cook for 1 min, add chilled rice, stir well & taste to adjust seasoning.Ladle rice into serving bowls/plates, garnish & enjoy!
