Din Tai Fung Prawn Fried Rice Ingredients

PRAWNS250 gr deshelled shrimps2 tsp sugar1 tsp baking soda2 cups waterSome Ice cubes2 tbsp oilFRIED RICE7 Eggs5 cups overnight cooked rice1/2 cup chopped scallions4 tbsp oilSEASONING1 1/2 tsp chicken stock powder1/2-1 tsp salt (adjust to taste)2 tsp sugar1 tbsp soy sauce1/2 tsp white pepper

Steps

PRAWNS:Mix water with baking powder and sugar and stir until dissolved, add prawns and ice cubes. Set in the fridge for 30 minsHeat 2 tbsp oil in a pan or wok, fry prawns for 1-2 mins and sprinkle some salt on top. Remove and Set asideRICE:Heat oil in a wok, add the eggs in, mix and fry until it mostly cooked then add in rice, toss to mix and combine well and slightly dry for 3-5 mins, then add all the seasoning and scallions, toss again for another min, lastly add prawns and give it another good stir. Serve fried rice with prawns
