Download ImageRice Ingredients1 tbsp olive oil1 cup onion (finely diced)4 cloves garlic (minced)2 tsp dried thyme1 tsp salt (to taste)1/2 tsp freshly ground black pepper2 cups brown rice (washed till water runs clear & drained)4 cups vegetable stock or water1 cup fresh parsley (chopped)Mushrooms Ingredients2 tbsp olive oil (divided)500 g fresh mushrooms of choice (sliced)1/2 tsp salt1/4 tsp freshly ground black pepperStepsHeat olive oil in a large pan over medium high heat, add onions & cook until translucent.Add garlic, thyme, salt & pepper, stir for 30 secs.Add rice & stir continuously for 1 min.Add vegetable broth, bring to a boil, cover & reduce heat to low.Cook until all of the liquid is absorbed (abt 35 mins)Meanwhile, in a separate pan, heat olive oil over high heat, add mushrooms in 2 batches (don’t overcrowd pan) & cook until they start to brown (abt 5 mins)Add salt & pepper, stir well & remove from heat.When rice is already cooked, add mushrooms & stir well.Turn off the heat, add parsley, stir, taste to adjust seasoning & transfer to serving plates.Garnish with more black pepper or red chilli flakes.
