Ingredients 5 cups cooked rice (chilled overnight)2 cups suçuk or Turkish sausage (chopped into 1/2 inch pieces)3 tbsp oil3 eggs (lightly beaten)1 cup shallot or onion (diced)1 cup carrot (diced)1 cup red bell pepper (diced)1/2 cup scallion (white & green parts separated, chopped)1 tsp red chilli flakes (to taste)1/2 tsp salt (to taste)1/4 tsp ground black pepper (to taste) Steps In a wok or large pan on medium heat, add suçuk & fry till fat has rendered (abt 2 mins), remove & set aside.Into the same oil, add eggs & cook for 2 mins, remove & set aside.Increase heat to medium high, add oil & when hot, add onion.Cook till onion turns translucent then add carrots & bell pepper, cook for 1 min.Add rice, white parts of scallion, chilli flakes, salt, pepper, suçuk & egg.Fry for 1 min, stirring continuosly & using the back of ladle to break any lumps.Taste to adjust seasoning & cook rice till it reaches desired doneness (wok hey)Serve fried rice with chopped green parts of scallions plus other fresh vegetables & condiment of choice (optional but I served mine with homemade Chinese chilli oil) Source : www.instagram.com
