Ingredients 5 cups cooked rice (chilled overnight)3 eggs (lightly beaten)4 tbsp oil (divided)1 cup onion (finely diced)2 cloves garlic (grated)1 inch ginger (grated)2 tbsp curry leaves (optional)1 cup cauliflower florets2 tbsp store bought or homemade curry powder (recipe below)1/2 cup carrot (diced)1/2 cup red bell pepper (diced)1/2 cup green peas1/2 cup corn kernels1 tsp salt (to taste) Steps Heat 2 tbsp oil in a wok or pan on high.When hot, add egg, cook for 1 min, scramble, stir & remove.Heat remaining oil in the same wok/pan, when hot, add onion, garlic & ginger, fry till onion turns translucent.Add curry leaves & cauliflower, fry for 5 mins.Add carrot & bell pepper, fry for 2 mins.Add rice & curry powder, stir continuously for 1 min to break up any lumps.Add peas, corn, salt & scramble egg, stir till everything is well mixed.Taste to adjust seasoning, remove from heat & serve. Homemade Curry Powder 8 cloves4 cardamom pods10 black peppercorns1 cinnamon stick1 star anise1 bay leaf3 dried red chillies1 tsp coriander seeds2 tbsp cumin seeds1 tsp fennel seeds1 tsp turmeric powder1/2 tsp ginger powder Steps Lightly toast whole spices till fragrant, add the rest & blend into a fine powder.
