Watch Video Mjadra & Rice (Lentil Rice) Ingredients 11⁄2 cups green lentils, washed2 cups basmati or medium grain rice, washed really well3 large onions, sliced1 teaspoon cumin1⁄2 teaspoon Lebanese mixed spiceSalt to taste (approx 11⁄2-2 teaspoons)Water1⁄3 cup vege oilOlive oil for onions Steps In a pot add lentils with water and bring to a boil, cook for 15-18mins. Strain the lentils keeping the liquid and pour liquid into a measuring jug. I was left with approx 2 cups lentil stock, add the vege oil and top with water to reach 4 cups in liquid. (31⁄3 cups if using medium grain rice)Add your rice, lentils, spices, salt and lentil stock to the pot and stir to combine. Bring to a boil then reduce to a very low heat. Put the lid on and cook till water is absorbed and rice is cooked (approx 30-35mins depending on the grain). Let sit with lid on for 5 mins before you fluff the rice.In a large pan add olive oil and saute your onions on a low/med heat till they caramalise and become nice and golden, be patient this can take a while.Serve In a platter topping with the onions.
