Preheat oven to 200c. In a large bowl combine prepared capsicum, Sweet potato, onion and mushrooms and toss in olive oil and sea salt. Spread in a single layer on a lined tray and roast for 20-30 minutes until golden and tender.2 Heat brown rice in the microwave according to packet instructions.3. Combine the dressing ingredients, mixing well and seasoning well with salt and pepper to taste.4. Toss rice and pan-roasted vegetables together with the dressing. Serve warm.
