Heat oil in a wok, fry shallots until golden brown, remove fried shallot (leave the oil in the wok) and set aside2. In the same wok, over high heat add beaten eggs, stir and scramble the eggs until cooked3. Add meatballs, cooked rice and seasoning ingredients, toss to combine for 10 mins until dry4.
