In a large bowl, Mash tofu2. Add the remaining ingredients in to the bowl (except oil and rice paper) and mix together3. Cut rice papers in half4. Prepare water in a shallow bowl, dip a piece of the rice paper for few seconds then remove and place it into a working surface or a cutting board5. Place 1-2 tbsp of filling in the center of the rice paper, then fold it together6. Heat oil in a deep pan7. Place few pieces into the hot oil, let it fry over medium heat for 1-2 mins each sides until crispy, (make sure not to move it around until it sets, to prevent from sticking)8.
