Peel the shrimp, keep the shell and season shrimp with salt and pepper2. Sauce: add shell in a pan, saute until dry and toasty then add water. Let it simmer for 5 mins, covered3. Remove shells and add the remaining sauce ingredients except butter and corn flour4. Let it boil then add corn flour mixture and stir until thick5. Lastly, melt butter in the sauce and set aside6. Omelette: heat oil in a pan, saute briefly shrimp both sides until pink along with the garlic, shallots, and tomatoes with a pinch of salt and pepper7. Heat oil in a pan, fry whisked egg, lower the heat. Spread sauteed shrimp mixture along with chives on top, and let it cooked, covered8.
