Download ImageBlueberry Lemon Curd Scones Ingredients1. 1 1/2 cups of all purpose flour2. 2 Tbsp sugar3. 1/2 Tbsp baking powder4. 4 Tbsp butter (cold)5. 1 egg6. 1 tsp vanilla extract7. 1/4 cup half and half or heavy cream or milk8. 1/4 cup lemon curd9. 1 cup fresh blueberrySteps1. Mix 1, 2 and 3 together in a large mixing bowl2. Cut butter into small pieces and work it in with the flour mixture until unevenly crumbly3. In a separate bowl, mix 5678 together4. Pour the wet ingredients into the dry ingredients and fold in the fresh blueberries5. Use a large spoon and stir the ingredients until it is moistened and holds together and form a circle (don’t over mix)6. Cut the dough into 6 or 8 wedges and pull apart carefully.
