Ingredients For Crust 18 Oreo cookies4 Tbs butter, melted Ingredients Cheesecake 2 1/4 cup (500 grams) cream cheese2/3 cup heavy cream16 oz Blueberries, fresh or frozen3/4 cup Sugar2 Tbs lemon juice2 pkgs, Knox gelatin – 10 grams total1 tsp vanilla1⁄3 cup oat milk Ingredients Blueberry Glaze 8 oz blueberries, fresh or frozen2 Tbs sugar1 pkg Knox gelatin, 5 grams1/3 cup water Directions 1. Spray 9” Springform pan with non-stick spray. Line with parchment paper. Cut circle for bottom & 4 inch tall strips for interior.2. Crush Oreos in a plastic baggie or blender. Stir in butter, press mixture firmly onto bottom of lined pan.3. Place blueberries & sugar in small saucepan, bring to simmer 5 minutes. Sprinkle gelatin powder over small bowl of 1⁄3 cup cold oat milk. Mash blueberries well or purée in blender. Stir in lemon juice & gelatin/oat milk mixture immediately. Set aside.4. In mixing bowl, whip cream cheese, add heavy cream & vanilla & whip until fluffy. Stir the blueberry purée mixture into the cream cheese mixture. Pour into springform pan. Cover & refrigerate 4 hours to overnight to set.5. When cake is set, make glaze. Bring 8oz blueberries & sugar to simmer, 5 minutes. Sprinkle gelatin over 1/3 cup cold water, puree blueberries, stir in gelatin mixture, cool. 6. Remove pan sides from cake, Pour blueberry glaze over top & decorate with berries & mint.
