Download ImageIngredients4 pieces filo pastry or flatbread (böreklik yufka veya lavash)2 tbsp butter (melted)Meat Ingredients500 g ground beef or lamb1 large onion (grated)3 cloves garlic (grated)1 tsp ground cumin1 tsp chilli flakes1 tbsp tomato paste1 cup breadcrumbs1 egg1 tsp salt1/2 tsp ground black pepperTomato Sauce2 tbsp butter1 large tomato (grated)1 tbsp tomato paste1/2 tsp salt (to taste)1/4 tsp ground black pepper (to taste)Yoghurt Sauce1 cup plain Turkish or Greek yoghurt2 garlic cloves (grated)1/2 tsp salt (to taste)Optional Garnishlettuce leavesparsley (chopped)cucumber (sliced)StepsCombine all ingredients for the meat in a large bowl, mix well with hands until it becomes a smooth paste, shape into 2 big balls & set aside.Spread 2 sheets of filo pastry onto work surface, place 1 meat ball close to the edge of filo closest to you.Spread meat into a long log, almost the same as the length of pastry then roll it up into a long cigar.Repeat the same for the other meat ball (divide meat into larger quantities when using smaller flatbreads)Cut pastry filled with meat into 2 inch pieces, place on a lined baking tray, brush with melted butter & bake in a 200 deg preheated oven for 30-40 mins until pastry turns light brown & meat is fully cooked.Meanwhile, combine all ingredients for the tomato sauce in a small saucepan, heat on medium low, cook until sauce reaches desired consistency & taste for seasoning.Combine all ingredients for yoghurt in a bowl & taste for seasoning.Place kebabs on serving plate, drizzle with tomato sauce & yoghurt.
