Download ImageKousa Bil Laban (Lebanese Zucchini In Yoghurt) Ingredients10-12 Lebanese zucchiniFilling500 g ground beef1 cup onion (finely diced)1 tsp ground all spice1 tsp ground black pepper1 tsp saltSauce3 cups yoghurt3 cloves garlic (grated)1 tsp salt1 tbsp corn starch1 cup water (reserved from boiling zucchini)StepsWash & dry zucchinis, cut off stalks & dried tipsCarefully insert corer about 3/4 of the way into zucchini, twist & pull out flesh (reserve to make soup or salad)Do this a few times until you have a generous cavity for stuffingBring a pot of water to a boil, add cored zucchinis & cook for 20 minsDrain (reserve boiling water) & set aside to cool down completelyHeat oil in a pan over medium, add onions & cook until it turns translucentAdd beef & spices, cook for 10 mins, taste to adjust seasoning & set aside to coolUsing fingers or a small spoon, stuff zucchinis with beef mixture & set asideIn a saucepan over medium low heat, warm yoghurtIn a small bowl, dissolve cornstarch with reserved zucchini broth, add garlic & saltWhisk cornstarch mixture continuously into warmed yogurt & bring to a boilReduce heat to low, add stuffed zucchinis & cook for 20 minsGarnish with toasted pine nuts, chopped parsley & dried mint, serve with rice or other carbs of choice Source : www.instagram.com
