Download ImageZeytinyağlı Enginar (Turkish Stuffed Artichoke Hearts) Ingredients 4 artichokes5 tbsp lemon juice3 cups water (divided)4 tbsp olive oil (divided)1 cup onion (diced)1 clove garlic (minced)1 cup carrots (diced)1 cup potatoes (diced)1/2 cup peas1 tsp salt1/2 tsp ground black pepper Steps Rub artichokes with 2 tbsp of lemon juice & set aside.Add 1 cup of water into a pot on medium high heat & bring to a boil.Add potatoes, boil for 5 mins, add carrots, boil for 5 mins, drain & set aside.Add 2 cups of water, 1 tbsp olive oil & artichokes, cover & boil for 10 mins.In a pan, heat 1 tbsp of olive oil on medium high, add onion & garlic, cook till onion turns translucent.Add parboiled potatoes & carrots, add peas & 1/2 tsp salt, mix well for 1 min & set aside.Add vegetable mixture into pot with artichokes, add remaining olive oil, salt, lemon juice & pepper, cover & cook for 10 mins.Check often to make sure that artichokes don’t stick to the base & cook until they are fork tender.Taste to adjust seasoning, arrange artichoke hearts into plate, spoon vegetable mixture into the center & drizzle some extra virgin olive oil. Artichoke Pilav 2 cups rice3 cups water2 artichokes (boiled in lemon water till knife tender & diced)5 tbsp olive oil1 cup onion (diced)1 clove garlic (minced)1 tsp salt1/2 tsp ground black pepper2 tbsp dill Steps To Make Artichoke Pilav Add olive oil into pot on medium high heat.Add onion, garlic & artichoke, cook till onion turns translucent.Add washed rice, salt & pepper, mix well for 1 min.Add water, place lid, bring to a boil, reduce heat to medium low, cook for 10 mins & remove.Open lid after 5 mins, stir in dill & serve.
