Preheat oven to 350 degrees.2. Rub sweet potatoes with oil and sprinkle salt lightly over the skin. Poke a few holes in the potato with a knife. Wrap in foil, place on cookie sheet and bake 1 hour until tender.3. Chop and de-seed plum tomatoes. Toss tomatoes with the chopped cilantro, juice from 1/2 of the lime, 1⁄8 tsp salt and pepper. Set aside.4. Toss the cooked, roasted, shredded chicken with 1 Tbs lebne, 1⁄4 tsp cumin, the juice from the other half of your lime. Salt and pepper to taste. Set aside.5. Toss the beans with 1/8 tsp cumin, 1/8 tsp salt and pepper.6. When the potatoes are tender. Remove from oven. Cut in half lengthwise and loosen up the potato by scraping it with a fork, keeping the outer skin intact.7. Top the potato with prepared chicken, beans and salsa. Top with a generous scoop of lebne, Greek yogurt or sour cream. Decorate with extra cilantro leaves and serve with lime wedges, and optional jalapeño slices. Source : www.instagram.com
