Download ImageWatermelon Salad Ingredients4 cups ripe seedless watermelon (cut into 1 inch cubes)1 cup cucumber (thinly sliced into rounds)1/2 cup shallot (thinly sliced)3 tbsp vinegar (I used pomegranate vinegar)1/2 tsp fine sea salt (divided)2 tbsp extra virgin olive oil1 tbsp fresh mint leaves1/4 tsp ground black pepperHerbed Yoghurt Sauce1 cup Turkish/Greek yogurt (I strained mine to make it thicker)1/2 tsp dried mint1/2 tsp dried basil1 tbsp extra virgin olive oil1 tsp honey or maple syrup1/8 tsp fine sea saltStepsIn a small bowl, combine sliced shallot with vinegar & 1/4 tsp salt.Toss to combine, chill in the fridge to lightly pickle while preparing the rest of the salad.In a another small bowl, combine all the ingredients for the yoghurt sauce, stir well & chill in the fridge.To serve, spread by swirling herbed yoghurt sauce on the base of a serving bowl or plate.Scatter cubed watermelon on top, followed by cucumber, pickled shallot on top & drizzle 1 tsp leftover shallot pickle juice over the salad.Drizzle olive oil on top, sprinkle with fresh mint, remaining salt, plus pepper.If not serving salad immediately, chill it in the fridge but it’s best served within an hour or two.
