Using the sweet potato from my oddbox, I washed them, pieced them all over with a fork and lightly rubbed oil all over. Place in oven to bake for 45 minutes3. Once baked, carefully cut in half ensuring the shell doesn’t rip. Scoop out the inner sweet potato and place in a bowl.4. Mash the sweet potato mixing together the Philadelphia, green pesto, 80g of cheese and chilli flakes.5. Place the filling back into the sweet potatoe shells sprinkling cheese all over topping it with pepper and salt6. Grill for 10 minutes on 180C until the cheese is bubbly. Source : www.instagram.com
