Spicy Mac N Cheese is a variation of the classic macaroni and cheese dish, where the addition of spicy ingredients gives it an extra kick of flavor. The dish typically includes elbow macaroni or any pasta of choice, a creamy cheese sauce made with milk, butter, and cheese, and a blend of spices and seasonings such as paprika, cumin, garlic, and chili powder.

The spiciness can be adjusted to personal preference by adding more or less of the spices. It is a comforting and satisfying dish that can be served as a main meal or as a side dish.

Ingredients

500g of cooked macaroni2 tbsp of butter2 tbsp of plain flour2 cups of full cream milk2 tbsp of dried chilli flakes1.5 cups of grated cheddar cheese1 cup of grated red leicester cheese1.5 cups of grated mozzarellasalt, to taste

For The Topping

1/2 cup of pickled jalapeños1 cup of grated cheddar0.5 cup of grated red leicester0.5 cup of grated mozzarella

Method

1. Add butter to a pan2. Once the butter has melted, add the flour and mix on medium heat until slightly golden brown3. Add milk, chilli flakes, the grated cheddar, red leicester and salt4. Add grated mozzarella and mix until melted5. Add the cooked macaroni and combine with the cheese sauce6. Place the mixture in an oven safe dish and top with pickled jalapenos, grated cheddar, red leicester and mozzarella7. Bake in the oven at 180C for 25 minutes, or until the top is golden brown and crispy8. Serve warm and enjoy!
