Watch Video Spaghetti Prawns Ingredient 1⁄2kg peeled, deveined Fresh Prawns, washed2 zucchini, grated2 punnets cherry tomatoes, sliced in half5 cloves garlic, crushed1⁄2 lemon, juiced1⁄4 cup olive oil, approx1 teaspoon dried oregano1 teaspoon dried Basil1 teaspoon Italian herbs1⁄2 teaspoon Paprika1 teaspoon chilli flakes (optional or add more or less)2 teaspoons butter1 cup reserved pasta waterSalt & pepper to tasteFresh chopped parsley, handful375g Spaghetti, cooked (reserving 1 cup pasta water) Steps Marinate cleaned Prawns with some Italian herbs, olive oil, s&p, fresh parsley and paprika. Set aside.Cook Spaghetti according to packet instructions, before straining keep 1 cup of the pasta water. Set aside.In a large pan warm up the olive oil and add tomatoes and garlic and saute on a low heat. Simmer for a few minutes then add all the herbs, chilli and spices. Lid on and cook till tomatoes are tender, stirring occasionally.Add lemon juice, pasta water, drizzle of olive oil and butter, simmer for a few minutes.Add Prawns and cook for a few more minutes till Prawns are cooked throughout, season to taste then add cooked pasta and stir to combine.Top with fresh parsley and stir.Enjoy this simple pasta dish , serve with garlic bread and rocket salad.
