Download ImageWatch Video Ingredients5 tbsp olive oil (divided)400 g spaghetti (or other long pasta of choice)600 g seafood of choice (prawns, mussels, calamari, crab, crayfish, etc)6 cloves garlic (minced)1 cup onion (finely diced)1 tsp dried basil1 tsp dried oregano2 tsp chilli flakes1 cup fish stock or water1 tsp salt (to taste)1/2 tsp freshly ground black pepper (to taste)4 cups tomato passata or canned crushed tomatoesStepsBoil a large pot of salted water, cook pasta according to instructions but reduce cooking time by 1 min (pasta will finish cooking in the sauce), reserve 1 cup of pasta water & drain pasta.Heat 3 tbsp oil in a large pan on medium high, add seafood according to its cooking time (crab/crayfish/large prawns take the longest, followed by mussels/clams, then calamari) transfer onto a plate & set aside.Into the same pan, heat remaining oil, add garlic & onion, cook till onion turns translucent.Add dried herbs, chilli flakes, salt & pepper, cook for 1 min.Add fish stock or water, scraping bottom of the pan to mix the brown bits into the liquid & simmer for 5 mins.Add tomato passata & simmer for 5 mins.Add pasta, precooked seafood, 1/2 cup reserved pasta water & toss gently (add more if needed)Taste to adjust seasoning, stir until sauce reaches desired consistency & pasta is fully coated.Divide pasta & seafood among 4 plates, garnish with chopped fresh parsley & more chilli flakes (optional) Source : www.instagram.com
