Download ImageWatch Video Mash Ingredients1 kg potatoes (cut into 5cm chunks)50 g butter100 g créme fraîche (I used Greek/Turkish yoghurt)3 tbsp milk (warm)1/2 tsp salt (to taste)1/4 tsp ground black pepper (to taste)Steps Mashed PotatoBoil potatoes until tender, drain & transfer into a large bowl.Add the rest of the ingredients & mash together.Taste to adjust seasoning & set aside.Filling3 tbsp butter (melted)1 tbsp olive oil1 bay leaf1 cup onion (finely diced)2 cloves garlic (minced)1 cup carrot (finely diced)3 tbsp AP flour200 g cod (cut into 2 cm cubes)200 g prawns (small or medium, roughly the same size as cod)200 g mussels (cleaned & deshelled)500 ml milk1 cup peas1 tsp salt (to taste)1/2 tsp ground black pepper1/4 tsp chilli flakes (optional)1 tbsp parsley (chopped)StepsHeat olive oil & 2 tbsp butter in a large pan on medium high, add bay leaf, onion & garlic, fry for 5 mins (stirring constantly) till onion turns translucent.Add carrot, cook for 2 mins, add flour & stir for 1 min.Add cod, prawns & mussels, cook for 2 mins, stirring constantly.Add half the milk, stir until there’s almost no lumps, add remaining milk & bring to a boil.Add peas, salt, pepper & chilli flakes (if using), stir & cook for 1 min.Taste to adjust seasoning & transfer into a baking dish.Top with mashed potatoes & pour remaining butter on top.Bake in a 200 deg C preheated oven for 25–35 mins or until golden brown.Garnish with chopped parsley & serve.
