Download ImageIngredients500 g dried pasta of choice12 tbsp butter150 g Parmesan cheese1&1/2 tsp salt, (to taste)2 cups reserved pasta waterStepsFill a large pot with water over high heat & bring to a boil.Once the water boils, add 1 tsp salt & cook the pasta until al dente (abt 8 mins)While the pasta is cooking, gently melt the butter over medium heat in a large pan.Drain the pasta (reserving the water) & transfer pasta to the pan with the melted butter.Add 1/2 tsp salt & toss pasta with a tongs to combine (nonstick & silicone tongs work best)Reduce heat to medium low, add a handful of grated cheese, 1/2 cup of hot pasta water, tossing the pasta continuously with your tongs to incorporate the cheese.Add remaining cheese (a little at a time), tossing between each addition, until all the cheese has been used.Add more hot pasta water as needed to melt the cheese so that it coats evenly (don’t add too much so it’s not too watery)Taste, add more salt if necessary, garnish with more grated cheese & black pepper (optional) & serve immediately.
