Semur Daging Sapi (Indonesian Sweet Soy Beef Stew) Ingredients 500 g beef cubes (cut of choice) Marinade 1/4 tsp turmeric powder2 tsp coriander powder1 tbsp sweet soy sauce1/2 tsp salt Aromatics 1/2 cup shallots3 cloves garlic1 inch ginger5 dried chillies (soaked in hot water for 10 mins) Whole Spices 2 inch cinnamon stick2 cloves2 cardamom pods1 star anise Stew 2 tbsp oil1 cup potatoes (cubed & deep fried)1 cup carrots (cut into 1 inch pieces)3 inch lemongrass (smashed)1 cup sweet soy sauce1 cup water1/2 tsp tamarind paste1/2 tsp ground black pepper1/2 cup fresh red or green chillies (sliced)1 medium onion (sliced into rings)1/2 cup green peas Steps Marinade beef for at least 2 hrs.Blend aromatics into a fine paste & set aside.Heat oil in a large pot on medium high, once hot, add whole spices & stir for 1 min.Add lemongrass & blended aromatics, stir continuously for 2 mins.Add marinated beef & cook for 2 mins.Add sweet soy sauce & water, bring to a boil.Lower heat to medium low, simmer for 15 mins, add carrots, tamarind & black pepper.Simmer for another 10 mins, add sliced chillies & onion & stir well.Taste to adjust seasoning, add peas & stir for 1 min.Remove from heat, ladle onto serving plate/bowl & serve with rice.
