Clear Broth Beef Soup With Radish Ingredients 2lb of beef chuck roast cut into same size piecesa few scallions (make a bundle)a piece of thumb size ginger5 cloves of garlicone medium size daikon radishsalt and ground white pepperfresh chopped scallions or cilantro Steps 1. Place beef in a big pot with cold water and bring to a boil for about 3-5 minutes, skim out the impurities. Take the meat out in a bowl and discard the water2. Rinse out the beef with cold water, clean the pot and put cold water and the cleaned beef back in3. Slowly bring the water to a boil and skim out any foam/impurities on the top4. Add ginger, scallions, garlic and a piece of kelp(optional)5. Turn down the heat to medium once it starts boiling, simmer for 1.5 – 2 hours until the beef is tender to your liking.
