Download ImageRoasted Red Pepper Chicken Ingredients4 chicken breasts2 roasted red peppers (I used jarred ones but you can definitely roast them in the oven too)1 tsp dried oregano2 tbsp olive oil1 garlic cloveSalt and pepper to tasteStepsMake sure the chicken breasts are thinly sliced and sprinkle them with salt, pepper and oregano.Heat some olive oil on medium heat and brown the chicken for a few minutes on each side, making sure they’re cooked through.Once done, remove to a separate plate and cover with foil.In the meantime, place the red pepper sauce ingredients in a food processor and blend until smooth.Taste to adjust any of the seasoning.Add the sauce to the pan and let simmer for a few minutes before adding the chicken and tossing to cover with sauce.Serve warm with a squeeze of lemon.
