Roast Eggplant and Garlic is a savory dish featuring roasted eggplant slices and whole garlic bulbs. The eggplants become smoky and slightly sweet, while the garlic cloves turn soft and mellow with a hint of caramelization. Ingredients

2 large eggplants, sliced lengthwise10 cloves of garlic, peeled and kept whole1.5 tbsp of dried thyme leaves2 tsp of smoked paprikasalt, to taste3 tbsp of olive oil

Method

1. Add the sliced eggplants and whole garlic cloves to a large bowl2. Drizzle olive oil all over3. Add salt, dried thyme leaves and paprika and mix well so all eggplant slices are covered well4. Place the eggplants and garlic cloves on a lined baking sheet5. Bake at 180C for 30-35 minutes, or until soft6. Enjoy!
