Mix all ingredients except oil and eggplant2 . Take 1/2 cup of the dry ingredients into another bowl then mix in with water until thick3. Cut eggplant into 5-6cm long4. Place eggplant in an upright position and cut it into criss cross pattern and use a pair of chopstick to prevent cutting it all the way down5. Dip into the batter and make sure to coat well in every nooks and creases6. Then dredge well with the dry flour mixture7. Heat oil in a deep pan, fry eggplant flower side down into the hot oil over medium heat for 2 mins each sides until crispy and golden brown Fry them in batches8.
