Make sure you keep the stock from the lentils thats where all the iron isIn the same pot add the ghee and onion saute until onion is golden brown In colour not burnt but dark enough to colour the riceAdd washed rice to the onion and mix through until every rice grain is coated with the ghee and onion .Add in the lentils and salt to taste give it a good mix and then add 3 1⁄2 cups of the lentil stock to the pot give it a stir and cover on high heat until it boils.Once it boils turn the heat all the way down to low and let the rice absorb.Once water had reduced turn off heat and leave the lid on for 15 minutes so the rice can falfel.Remove the lid and with a fork fluff up the rice and serve next to cucumber with yoghurt sauce.
