Download ImageLontong Goreng (Fried Malay Rice Cakes) Ingredients4 cups lontong or ketupat (cut into bite sized pieces)2 tbsp oil1 cup ground meat of choice (or mushrooms/tofu for vegan option, I used ground beef)2-3 tbsp dried red chillies (washed, sliced & rehydrated)1 cup onion (diced)5 cloves garlic1 tbsp curry powder1 tbsp tomato paste2 tbsp sweet soy sauce (kicap manis)1 tsp salt (to taste)1 cup carrot (diced)3 cups cabbage (thinly shredded)1 cup peas (fresh or frozen)Garnishomelette (sliced)fried shallotscilantro (chopped)StepsBlend red chillies, onion & garlic into a fine paste & set aside.Heat a large wok or pan on medium high, add ground meat, cook for 5 mins then remove.Into the same wok, add chilli mixture & fry for 5-8 mins till oil starts to separate.Add curry powder, tomato paste, soy sauce & salt, stir for 2 mins.Add cooked ground meat, stir for 1 min & add carrots.Cook for 1 min, add rice cakes, cabbage & peas, stir gently to coat rice cakes.Taste to adjust seasoning, transfer into individual plates/bowls, garnish & serve.
