Cook the whisked eggs until scrambled. Remove eggs to a seperate plate.In the same pan, melt another tbsp butter and sauté onions, garlic, carrots, peas and corn for a few minutes. Season with salt and pepper.Add the last tbsp butter and stir to melt. Turn to high heat and mix in rice, soy sauce, green onions and stir till combined. Stir every 20 seconds for a few minutes. Add the scrambled eggs and stir to combine.Remove from heat, add sesame oil and stir. Taste and add more soy sauce if needed. Garnish with green onions and serve right away. Enjoy!
