Download ImageHomemade Granola Bar Ingredients2 cups of rolled oats1/2 cup of cashew butter (peanut or almond butter will work)1/3 cup shredded coconut1/4 cup maple syrup1 tbsp coconut oil, melted2 flax eggs (2 tbsp @canmarfoods ground flax seed mixed with 6 tbsp water)1 tsp vanilla1/4 tsp almond extract1/2 tsp sea salt1/2 tsp cinnamon2 tbsp chocolate chips *optional but recommend (@enjoylifefoods)1/4 cup sprinkles plus more for sprinkling on top @cravestevia1/4 cup of of white chocolate, melted (I used @greenandblacks white chocolate bar)Method1. In a small bowl, make your flax egg and let sit for 5 minutes.2. In a large mixing bowl, add your dry ingredients and mix.3. In a small sauce pan or in the microwave, melt your nut butter and oil. Add the melted mixture wet ingredients to the dry ingredients and mix well. Add in your flax egg and continue to mix.4. Once well mixed, line a loaf tin with parchment paper and evenly spread out granola bar mixture. Take a spatula to press down the mixture.5. Cover and place in the freezer for 45 minutes.6. Remove from freezer, drizzle with white chocolate, add more sprinkles and slice into bars.7. I individually wrapped my bars for an easy grab go option.
