Download ImageIngredients (Makes 16 Bars)3 cups rolled oats1/2 cup peanut butter1/2 cup brown sugar1 cup chocolate chips1 tsp vanilla extract200g butter (a bit less than a cup)StepsIn a large pot on medium heat, melt the butter and sugar just until the butter melts and the sugar dissolves completely.Add the vanilla extract and oats and cook for another 2-3 minutes or until everything comes together.Place half of this oat mix in a 23cm pan lined with parchment paper and press down evenly.Keep the other half of the oat mix for the second layer.To make the filling, place the chocolate chips and peanut butter in a microwave-safe bowl and melt in 30-second increments, stirring in between until smooth.Pour the choco mix over the the first oat layer and spread evenly (keep 1/4 cup of the choco spread to drizzle at the end).Place the other half of the oat mix on top of the chocolate layer and drizzle over with the remaining 1/4 cup of chocolate.Cover and place the pan in the fridge for 2-3 hours to set before cutting.Make sure you bring the whole thing to room temperature before cutting into bars (20-30 minutes out of fridge).
