In a small bowl, combine the pure creamed coconut with boiling water and stir well until a thick mixture forms.2. In a larger bowl, melt the white chocolate chips together with the butter and creamed coconut mixture in the microwave for about one minute.3. Add the double cream and approx 8 tbsp of desiccated coconut and mix well. Cover with cling film and leave to cool in the refrigerator for about an hour and a half.4. Remove from the fridge and roll small sized balls from the mixture. (Optional – push a hazelnut into the centre and roll again so it’s firmly inside!)5. The balls should be easy to form in your palm, but still sticky so that the remaining desiccated coconut can be sprinkled on top and cover the outer edges completely. Eat within 2 – 3 days.
