In a food processor, Blend garlic and chilies along with water2. Transfer into a sauce pan, bring it to a simmer, add salt, sugar and rice vinegar. Stir and simmer for a minCORN FRITTERS1. Add stripped corn, green onion, minced garlic, kaffir lime leaves and shallots into a big bowl, mix to combine2. Now add rice flour, APF, baking powder along with the seasoning ingredients. Mix well3. Heat oil in a shallow pan4. Add ice water into the corn mixture, and mix well5. Directly, scoop 2 tbsp of the corn mixture into the hot oil, fry 4-5 pieces each batches over medium heat until golden brown 1-2 mins on each sides6. Transfer onto wire rack.
