Boneless chicken karahi is a popular Pakistani and North Indian dish known for its rich and robust flavors. It features tender pieces of boneless chicken cooked in a thick and aromatic tomato-based curry sauce. The dish is typically prepared in a karahi, a traditional round-shaped cooking utensil, which gives it its name.

To make boneless chicken karahi, start by marinating the chicken pieces in a mixture of yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. This marinade helps to tenderize the chicken and infuse it with flavors. Allow the chicken to marinate for at least 30 minutes or up to overnight for maximum flavor.

In a large, deep skillet or karahi, heat oil or ghee over medium heat. Add whole spices like cloves, cinnamon, and cardamom to the hot oil and let them sizzle for a few seconds to release their flavors. Then, add finely chopped onions and cook until they turn golden brown.

Once the onions are caramelized, add ginger-garlic paste and cook for a minute until fragrant. Next, add chopped tomatoes and cook until they soften and release their juices. The tomatoes form the base of the curry sauce and contribute to the rich flavor of the dish.

Now, it’s time to add the marinated chicken pieces to the skillet. Stir-fry the chicken on medium-high heat until it is lightly browned and cooked through. This step helps seal in the flavors and gives the chicken a nice texture.

To enhance the flavors, add a combination of ground spices such as cumin powder, coriander powder, garam masala, and Kashmiri red chili powder. Adjust the spice levels to your preference by adding more or less red chili powder. Stir the spices into the chicken and let them cook for a minute or two to coat the chicken evenly.

Finally, add a splash of water to create a thick and luscious gravy. Simmer the chicken in the gravy for a few minutes to allow the flavors to meld together. Finish the dish by garnishing it with fresh coriander leaves and ginger slices for a burst of freshness and added aroma.

Boneless chicken karahi is traditionally served hot with naan bread, roti, or steamed rice. It is a flavorful and comforting dish that is perfect for family dinners or special occasions. The tender chicken, combined with the aromatic spices and tangy tomato-based sauce, creates a delightful culinary experience.
