Download ImageBlueberry Chocochips Muffins IngredientsMuffinswet63 grams soft butter125gr granulated sugar• 1 egg• 35gr thick plain yoghurt• 1/2 cup milk ( i used almond milk)• 2 tbs lemon juice• 1/2 tbs lemon zest (optional)• 1/2 tbs vanilladry• 175gr all purpose flour• 1/2 tbs baking powder• 1/2 tsp salt• 75 gr blueberries (toss with 1/2 tbs flour)• cream cheese (cut into smal cubes)Crumble Topping• 19gr flour• 23gr sugar• 14gr cold butter (cut into cubes)just combine all of them using a fork till it becomes a crumbleSteps1. Using a mixer, whisk the butter and sugar until light and creamy2. Add in the egg and whisk again3. Combine the rest of the wet ingredients and whisk till fully combined4. Sift in ur flour and the rest of the dry ingredients and mix using a spatula5. Toss ur blueberries with 1/2 tbs of flour to prevent them from sinking. Gently mix till well combined, make sure to not overmix!!6. On a lined muffin pan, place ur cupcake lines7. Pour about 1/2 tbs of the batter, add the cream cheese cubes, cover with more batter and topped with the crumble8. Bake at 180C for about 30-35mins depending on ur oven and the size of ur muffins! so just make sure to keep an eye on them7. Once done let them cool for a bit and ENJOY!! Source : www.instagram.com
