Download ImageZa’atar Crusted Sweet Potato Fries Ingredients3 large sweet potatoes (scrubbed clean & cut into thick batons)3 tbsp olive oil2 tbsp za’atar spice mix1/2 tsp sweet paprika1/4 tsp cayenne pepper or chilli flakes (optional)1/2 tsp flaky sea salt (to taste)Steps To MakeSubmerge sweet potato batons in a large bowl of cold water for 1 hr, drain & pat dry.Preheat oven to 200 deg C.Transfer sweet potato to 2 baking trays lined with parchment paper (space them out well), drizzle with olive oil & toss well to coat.Mix za’atar, paprika & cayenne pepper (if using) in a small bowl, add to the fries & toss to evenly coat.Bake for 20 mins, remove trays from the oven, flip fries over & return trays back to the oven & bake for another 20 mins until fries are cooked through & crispy.While fries are baking, prepare dipping sauce of choice.When fries are done, remove from oven, transfer fries to a cooling rack, sprinkle with salt & let them rest for about 5 mins before serving.
