Download ImageToad In The Hole IngredientsPudding4 good quality large sausages of choice2 tbsp oil1 cup AP flour4 eggs3/4 cup milk1/2 tsp salt1/4 tsp ground black pepperGravy2 cups onions (thinly sliced)1 tbsp vegetable oil1 tbsp butter1 tsp brown sugar2 tbsp AP flour2 cups beef stock (kept warm)1 tsp Worcestershire sauce1 tbsp dark soy sauce1/2 tsp ground black pepper1 tsp fresh thymeStepsPlace flour in a jug, add eggs & mix with a balloon whisk.Add milk & whisk until combined (a little lumpy is ok)Chill batter in the fridge for 1 hr (up to overnight)When ready to cook, preheat oven to 220 deg C.Arrange sausages in a large baking dish, drizzle with oil, bake for 20 mins (turning occasionally till browned all over)Remove batter fr fridge, add salt & pepper, whisk.Carefully open oven door, quickly pour batter into baking dish with sausages, close door immediately & bake for 20-30 mins until golden.To make gravy, add oil & butter in a pan over medium low.Add onions & sugar, cook for 20 mins, stirring occasionally, until starting to caramelize.Add flour, stir & cook for 2 mins.Add beef stock slowly, while whisking, until gravy thickens.Add Worcestershire & soy sauce, pepper & thyme then taste to adjust seasoning.Serve pudding with gravy & other sides of choice.
