Download ImageThai Red Curry Fried Rice (Khao Phat Kaeng Phet) Ingredients3 cups cooked rice (chilled overnight)3 tbsp vegetable oil3 cloves garlic (minced)3 shallots or 1 medium onion (finely diced)2 tbsp Thai red curry paste (homemade or bottled)1 tsp curry powder (optional)1 large carrot (diced)2 cups cabbage (chopped)1 tsp fish sauce (optional)1/2 tsp salt (to taste)1/4 tsp ground white pepper (to taste)StepsHeat a wok or large pan on high & add oil.When hot, add garlic & shallots, fry till shallots have turned translucent.Add red curry paste & curry powder (if using), fry till fragrant (abt 2 mins)Add carrot & cabbage, fry for 5 mins.Add rice, fish sauce, salt & pepper, mix well for 2 mins.Taste to adjust seasoning & remove from heat.Ladle onto serving plates, garnish with fried egg, sliced cucumbers & tomatoes, lime or lemon wedge & fresh herbs (optional).
