Chinese Stir-fried Tomato & Eggs Ingredients 4 eggs (lightly beaten with 1 tbsp water)2 large or 3 medium tomatoes2 tbsp oil (divided)1/2 cup shallot or onion (sliced)3 cloves garlic (minced)1 tsp light soy sauce1/2 tsp sesame oil1/2 tsp salt (to taste)1/4 tsp ground white pepper (to taste)1 tbsp scallion (chopped)water (for blanching) Steps Heat water in a medium pot.Score tomatoes lightly, blanch in hot boiling water for 30 secs, remove & immerse in ice cold water for 30 secs.Peel skins off & roughly dice.Heat 1 tbsp oil in a pan on medium high.When hot, add eggs, leave for 1 min before scrambling it, cook for 1 more min & remove.Into the same pan, add oil & shallot.Cook for 30 secs, add garlic & tomatoes.Cook until tomatoes break down & sauce has thicken (abt 5-7 mins)Add soy sauce, sesame oil, salt & white pepper.Stir & add scrambled eggs, taste to adjust seasoning.Remove from heat, sprinkle chopped scallions & serve immediately as is or with rice.
