Download ImageIngredients (3-4 Servings)Gnocchi (around 500g)1 can tomato sauce1 onion chopped1-2 garlic cloves grated1 carrot chopped1/2 eggplant choppedOlive oilHandful of basil leavesSalt and pepperDried oregano, dried thyme, paprikaMozzarella cheese for toppingStepsHeat some olive oil on medium heat in a big pot.Cook the onion and the garlic for a minute and add in the chopped veggies and sauté for around 10 minutes or until the veggies are soft.Add in the tomato sauce, season with salt, pepper, herbs and some roughly chopped basil.Bring to a boil and let simmer 10 minutes.In the meantime, cook the gnocchi.Once done, toss in the cooked gnocchi with the tomato sauce and place in an oven dish and top with mozzarella slices.Place in a preheated oven on 200 degrees for 15 minutes or until the cheese starts to brown.Garnish with basil leaves and serve warm.
